Thai and Vietnamese chef’s table with the 2023 MasterChef Champion
This month, I had the pleasure of being invited to collaborate with the superbly talented Chariya Khattiyot, 2023 MasterChef UK Champion. We were co-chefs for a sold-out, six-course Thai and Vietnamese chef’s table at her restaurant, Khao Soi by Chariya in Alton, Hampshire, UK.
It was a great opportunity to share our knowledge of our respective cuisines, but also to work with Chariya and her amazing front- and back-of-house teams. My gratitude goes to Chariya, Charlotte, Ella, Izzy, Ja, Kaylie, Lola, Luibov and Forest Kwok (MasterChef 2023) for all their support that evening.
Recipe videos, with more on the way
I have also greatly enjoyed working with an experienced TV Producer/Director and his Director of Photography on recipe films for my website in the past months. It has been superb to have the opportunity to share the cuisine of my Vietnamese cultural heritage in this way. The first four films can be viewed on my YouTube channel at:
I will shortly be releasing further videos, including a delicious, comforting fish soup, and a spin on waffle and chicken – Vietnamese style, but please let me know if you’d like to see me make other dishes. School of Wok cooking classes
Teaching a class at the award-winning School of Wok in Covent Garden, London was great fun in September. This sold out and my twelve guests and I had enormous fun creating Vietnamese dishes together, having drinks, and eating the food we created. The staff at school are so lovely, so a huge thanks goes to Nev, Stefan, Ollie, Ian and Kiki.
I am excited to be delivering further classes in 2025 at this Central London cookery school and will be announcing the dates on my website soon. I am also guest chef for a cooking retreat at Stoodleigh Court Coach House near Tiverton, Devon on 1 December 2024.
Spirit of Christmas, Olympia London and congratulations to Louisa’s Honey for winning a Golden Fork
You might also like to keep an eye on my website for my on-stage cooking demos at food festivals in 2025. On 10 November 2024 at 14.00, I will be appearing on stage with Jonathan Henry “The plastic Italian” using Louisa’s Honey at Olympia London’s Spirit of Christmas organised by House and Garden magazine. Jonathan is an extremely talented chef, and I am absolutely delighted to be collaborating with him.
On another note, many congratulations to my good friends at Louisa’s Honey for winning a prestigious Golden Fork for their Bosco honey in 2024. Jonathan and I will both be using Louisa’s Honey as one of our ingredients at Olympia. The Golden Forks are the Great Taste Awards (Guild of Fine Food) pinnacle awards and there is only one winner for each country. Well done to Louisa and Simon Georgiou, and Peter Foster, for an outstanding achievement and accolade! I have witnessed this small, family business work supremely hard over the past year and this is very well-deserved. They are lovely people. If you have not tried their honey, it is absolutely delicious. Do seek out their stand at UK food festivals, or you can also order online.
Great British Food Awards Guide 2024
I was privileged to be selected as a judge for the prestigious Great British Food Awards earlier this year. Other judges included esteemed chefs such as Raymond Blanc OBE, Michel Roux Jr., Eric Lanlard, etc., broadcaster and wine expert Olly Smith, The Telegraph’s restaurant critic, William Sitwell, and other leading food-industry experts. It is a wonderful way for UK food producers to have their products appraised. I judged the oils and vinegars category, which was a wonderful experience. The field was particularly strong, with some outstanding and innovative products. The Great British Food Awards Guide 2024 will be available later this month, click here, so please do peruse the well-deserved winners across all of the food categories. It is wonderful to support these excellent food businesses. Congratulations to them all!

Thank you to everyone who has supported me since appearing on MasterChef. It has been an amazing journey that has brought many wonderful new friends: from former MasterChef contestants, to artisan food producers, to professional chefs and authors, to festival organisers, to those working in the publishing and food awards industry, to those interested in food and cooking who connect with me on social media, or even just say “hello” at festivals. As we move into the winter, I’m already planning lots of exciting things for next year and I hope to meet some of you there. Thank you to you all!
