Places available for my Vietnamese cooking class at School of Wok, Friday 20 June 2025
I can’t wait to be teaching at the award-winning School of Wok in Covent Garden, London again. My class will take place 18.00-20.00 on Friday 20 June 2025 and there are still places available. You can book by clicking here. It will be fun-filled cooking class where I will teach some fabulous dishes ready for the Summer BBQ season: a refreshing pink pomelo and prawn salad; delicious sesame beef skewers; and pork ribs with lemongrass and chilli. The skewers will be wrapped the traditional Vietnamese way in salad leaves, with herbs, pickled carrots, and vermicelli noodles to be dipped in a fish sauce. Attendees will eat the food they cook during the class and there is plenty of opportunity to chat, share some drinks and make new friends. I would love to see you there!
Vietnamese masterclass at the College of West Anglia
I was delighted to be invited to give a cooking masterclass for the talented hospitality students at the College of West Anglia this month. Thank you to Maddie Belding for asking me and also Chef Adam Burns and his team for all their support. It was a wonderful experience to broaden the horizons of these young, aspiring chefs as they experienced cooking Vietnamese food for the first time. Many are already working in professional kitchens and they have bright futures ahead. We made crispy pork bánh mì, a green mango a prawn salad, and prawn and pork wontons.
CarFest, Sunday 24 August 2025
On 24 August, I will be doing on-stage cooking demos at CarFest. The festival was created by Chris Evans to help raise funds for UK children’s charities and takes place at Laverstoke Park Farm, Overton, Hampshire. This huge festival is an opportunity to admire some of the fastest cars, enjoy music performances from some of the UK’s best artists and DJ’s (e.g., Madness, Squeeze and the Lightning Seeds on the Sunday), and get involved in some incredible food demonstrations. The host for my cooking demonstrations will be Channel 4’s Great British Bake Off contestant Briony May Williams. I’ll also be interviewed by Bake Off winner, Candice Brown at the Kitchen Table stage and answer any audience questions. If you’d like to get involved, I will be making dumplings with audience members on the Cook’s Companion stage. The timings are on my website here. The line-up across the weekend features the likes of esteemed chefs, TV’s Si King (Hairy Bikers), Rosemary Shrager and Michael Caines, as well as notable food writer, Tom Parker-Bowles, among many others.
