Vietnamese BBQ: Beef skewers with oyster sauce, garlic jumbo prawns, lemongrass and chilli pork ribs

Outdoor cooking and BBQ is hugely important to Vietnamese people. The wafting aroma of meat cooking on charcoal is reminiscent of my childhood in Saigon. Vietnamese people have cultivated unique marinades over the centuries, which produce delicious, fragrant and succulent dishes. You may have also seen my article on Vietnamese BBQ, “Fire up flavour” in Great British Food magazine published in June this year. I was delighted, then, to be gifted a superb BBQ griddle pan from Hexclad Europe and given an amazing, discounted, hand-built Firepit from Firepits UK, and just in time for the summer. Both products are absolutely incredible! So, I’ve made another recipe film using beautiful ingredients from some great friends: soft, marbled Jagyu beef from Georgie at Norfolk and Better Farm; wonderfully fresh, tasty jumbo prawns from Robert and Gareth at The Musselman in Egham, Surrey; multi award-winning Italian honey from Louisa’s Honey; and finger limes imported from Australia by H and Peter at Lime Caviar UK.
